Ingredients

  • 4 eggs
  • 1 tsp caster sugar
  • 2 cans cherry tomatoes
  • Small bunch coriander, finely chopped
  • 1 garlic clove, finely chopped
  • 1 green chilli, deseeded and finely chopped
  • 1 onion, finely chopped
  • Grated Parmesan, to taste

Easy eggs in spicy tomato sauce

Method

  1. Heat the oil in a frying pan, then soften the chopped onions, chilli, garlic and coriander for 5 minutes. Pour in the tomatoes, then bubble until thick.
  2. Add the sugar and gently stir in.
  3. Make 4 indents in the sauce with a large spoon, then crack an egg into each one.
  4. Put a lid on the pan, then cook over a low heat for 6-8 minutes, until the eggs are done to your liking.
  5. Serve with crusty bread, and top with grated Parmesan cheese if you wish.
