  • 150g plain flour
  • 1/2 teaspoon salt
  • 1 teaspoon caster sugar
  • 1 tablespoon baking powder
  • 225ml milk
  • 1 egg
  • 1 knob of butter, melted
  • butter or oil for frying
  • Topping of your choice

Breakfast pancakes

Method

Makes: 12 pancakes

  1. Combine the flour, salt, baking powder and sugar in a large mixing bowl, and make a well in the centre.
  2. Whisk in the milk, and add the egg and melted butter. Whisk until the batter is smooth.
  3. Heat a frying pan over medium heat, and grease with butter or vegetable oil.
  4. For one pancake, use one ladle of batter. Ladle into the pan and allow to cook until the edges have gone slightly dry, and the pancake lifts easily from the pan.
  5. Flip and cook the reverse side until golden brown.
  6. Serve hot with your favourite toppings, such as maple syrup and blueberries.
